Pancakes with Honeycomb, Persimmon and Pistachios
Ingredients: (serves 4)
100g Pure Origins Wild Raw Honeycomb
1 ¾ cups self-raising flour
2 eggs
1 ¼ cups low fat milk
1/4 cup caster sugar
2 persimmons, cut into wedges
¼ cup pistachios, roughly chopped
2/3 cup Greek yoghurt
Method:
1. Place flour in a bowl and make a well in the middle. In a separate bowl, whisk together eggs, milk and sugar. Pour into the well in the flour, and whisk to combine. Making the well helps to stop lumps forming in the batter.
2. Heat a non-stick frying pan over medium heat and add ¼ cup of the batter. Cook for 1-2 minutes or until lots of bubbles form on the surface of the batter. Carefully flip with an egg slide and cook for a further 30 seconds. Remove from pan and repeat with remaining batter.
3. Serve pancakes topped with persimmon, pistachio, yoghurt and honeycomb.
